Prepare the batter:

Heat the pan:
Heat a non-stick skillet or griddle over medium heat and lightly oil it. -
Cook the pancake:
Pour the batter onto the pan and shape it into a thick, round pancake (about 1 inch thick). Place pork slices on top (if using). Cook for 4–5 minutes on each side until golden brown and cooked through. You can press gently with a spatula. -
Add toppings:
Once done, transfer to a plate. Drizzle with okonomiyaki sauce and mayonnaise. Sprinkle bonito flakes and aonori on top. Add pickled ginger if desired.
