🇪🇬 Koshari Recipe – Traditional Egyptian Street Food
Koshari (also spelled Kushari) is one of Egypt’s most beloved street foods. This hearty and flavorful dish is a unique combination of lentils, rice, pasta, and chickpeas topped with crispy fried onions and a spicy tomato vinegar sauce. It’s vegan, affordable, and absolutely delicious!
📝 Ingredients
For the Base:

1 cup brown lentils

1 cup white rice (preferably short-grain)
-
1 cup small pasta (elbow macaroni or ditalini)
-
1 cup cooked chickpeas (or canned, drained)
-
Salt, to taste

2 tablespoons vegetable oil
For the Tomato Sauce:
-
2 tablespoons oil
-
4 cloves garlic, minced
-
1 teaspoon ground cumin
-
1 teaspoon chili flakes (optional)
-
1 can (400g) crushed tomatoes
-
2 tablespoons white vinegar
-
Salt and pepper, to taste
For the Crispy Onions:
-
2 large onions, thinly sliced
-
Oil for frying
-
A pinch of salt
👩🍳 Instructions
Step 1: Cook the Lentils

Rinse the lentils and boil them in salted water until tender (about 20–25 minutes).

Drain and set aside.
Step 2: Cook the Rice

In a pot, add 1 tablespoon oil and the rinsed rice.
-
Add 2 cups water and a pinch of salt.
-
Bring to a boil, cover, and simmer until cooked (about 15 minutes).
Step 3: Cook the Pasta

Boil the pasta in salted water until al dente.

Drain and set aside.
Step 4: Make the Tomato Sauce

In a pan, heat 2 tablespoons of oil and sauté garlic until fragrant.

Add cumin and chili flakes.

Pour in the crushed tomatoes and vinegar.

Season with salt and pepper.

Simmer for 10–15 minutes until slightly thickened.
Step 5: Fry the Onions

In a pan, heat oil and fry the sliced onions until golden brown and crispy.

Drain on paper towels and sprinkle a pinch of salt.
🍽️ To Serve
In a bowl or plate:

Add a layer of rice, then lentils, pasta, and chickpeas.

Spoon over tomato sauce.

Top with crispy onions.
Serve warm with extra sauce and vinegar on the side if desired.
