(Stir-Fried Glass Noodles with Vegetables and Beef)
Japchae is a popular Korean dish made with sweet potato glass noodles, stir-fried with a colorful mix of vegetables, beef (optional), and a sweet-savory soy-based sauce. It’s healthy, satisfying, and perfect for lunch, dinner, or special occasions.
📝 Ingredients (for 2–3 servings):
Main:

150g Korean sweet potato noodles (dangmyeon)

100g beef (thinly sliced, optional)

1/2 onion (sliced)

1/2 carrot (julienned)

1/2 red bell pepper (sliced thinly)

1/2 zucchini (julienned)

4–5 shiitake or button mushrooms (sliced)

A handful of spinach (blanched)

1 spring onion (chopped, optional)

1 tbsp sesame seeds (for garnish)
For the Sauce:

3 tbsp soy sauce

1½ tbsp sugar

1 tbsp sesame oil
-
1 clove garlic (minced)

Salt and pepper to taste
For the Beef Marinade (if using):

1 tbsp soy sauce

1/2 tbsp sugar

1/2 tsp sesame oil

1/2 clove garlic (minced)
👨🍳 Instructions:
Step 1: Prepare the Noodles

Boil the glass noodles for 6–7 minutes until soft.

Rinse with cold water and drain well.

Cut the noodles with scissors (optional) and drizzle with 1 tsp sesame oil to prevent sticking.
Step 2: Cook the Vegetables

Sauté each vegetable (onion, carrot, zucchini, bell pepper, mushrooms) separately in a little oil with a pinch of salt. Set aside.

Blanch the spinach in hot water for 30 seconds, rinse in cold water, squeeze out moisture, and season lightly with sesame oil and salt.
Step 3: Cook the Beef (Optional)

Marinate the sliced beef for 10 minutes.

Stir-fry in a pan until cooked through.
Step 4: Make the Sauce

In a bowl, mix soy sauce, sugar, sesame oil, and garlic.
Step 5: Combine Everything

In a large pan or bowl, add the noodles, vegetables, and beef.
