🥢 Jajangmyeon (Korean Black Bean Noodles) Recipe
Jajangmyeon is a popular Korean-Chinese noodle dish made with thick black bean paste, pork, and vegetables. It’s savory, slightly sweet, and incredibly comforting.
📝 Ingredients:
For the Noodles:

400g fresh Jajangmyeon noodles (or thick wheat noodles)
For the Sauce:

200g pork belly or shoulder (cut into small cubes)

2 tbsp cooking oil

1 medium onion (diced)

1 zucchini (diced)

1/2 potato (diced)

1/4 cup cabbage (chopped)

1 tbsp minced garlic
-
1/2 cup chunjang (Korean black bean paste)

2 tbsp sugar
-
2 cups water
-
1 tbsp cornstarch + 2 tbsp water (for slurry)

1 tbsp oyster sauce (optional)

Salt and pepper to taste
For Garnish:

Thinly sliced cucumber or green peas (optional)

Prepare the Noodles:

Boil the noodles according to package instructions. Drain, rinse in cold water, and set aside.

Cook the Pork and Veggies:

Heat oil in a large pan or wok. Add pork and stir-fry until cooked through.

Add garlic, onion, zucchini, potato, and cabbage. Stir-fry for about 5–7 minutes until vegetables are slightly soft.

Make the Black Bean Sauce:

Push the ingredients to one side of the pan. Add a bit more oil and stir-fry the chunjang paste on the empty side for 1–2 minutes to reduce its bitterness.

Mix everything together, add sugar, oyster sauce (optional), and stir well.

Add water and bring to a boil. Let it simmer for 10–15 minutes until vegetables are fully cooked.

Thicken the Sauce:

Mix cornstarch and water to make a slurry. Add it to the sauce and stir until it thickens.

Place cooked noodles in a bowl and pour the black bean sauce over them.

Garnish with sliced cucumber or green peas if desired.
