For the Chicken Marinade:
500g chicken (drumsticks or pieces with bone)
1 tsp salt
1 tsp black pepper
1 tsp chili powder (optional)
1 tsp garlic paste
1 tsp ginger paste
1 tbsp lemon juice
1/2 cup buttermilk or fresh milk
For the Coating:
1 cup all-purpose flour
1/2 cup cornflour (optional, for extra crispiness)
1/2 tsp baking powder
1/2 tsp paprika or chili powder
Salt to taste
Black pepper to taste
For Frying:
Oil for deep frying

1. Marinate the Chicken
Clean and wash the chicken pieces.
In a bowl, mix salt, pepper, chili powder, garlic paste, ginger paste, lemon juice, and buttermilk.
Add the chicken pieces and mix well to coat.
Cover and refrigerate for at least 2 hours or overnight for best results.
2. Prepare the Coating
In a separate bowl, combine flour, cornflour, baking powder, paprika, salt, and black pepper.
Take each marinated chicken piece and coat it well in the flour mixture.
For extra crunch, dip the coated chicken back into the marinade and then into the flour again (double coating method).
3. Deep Fry the Chicken
Heat oil in a deep pan over medium heat.
Gently place the coated chicken pieces into the hot oil.
Fry until golden brown and crispy on all sides (about 10–15 minutes depending on size).
Drain on paper towels to remove excess oil.
