For the Chicken Marinade:

  • 500g chicken (drumsticks or pieces with bone)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp chili powder (optional)

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 1 tbsp lemon juice

  • 1/2 cup buttermilk or fresh milk

For the Coating:

  • 1 cup all-purpose flour

  • 1/2 cup cornflour (optional, for extra crispiness)

  • 1/2 tsp baking powder

  • 1/2 tsp paprika or chili powder

  • Salt to taste

  • Black pepper to taste

For Frying:

  • Oil for deep frying

1. Marinate the Chicken

  • Clean and wash the chicken pieces.

  • In a bowl, mix salt, pepper, chili powder, garlic paste, ginger paste, lemon juice, and buttermilk.

  • Add the chicken pieces and mix well to coat.

  • Cover and refrigerate for at least 2 hours or overnight for best results.

2. Prepare the Coating

  • In a separate bowl, combine flour, cornflour, baking powder, paprika, salt, and black pepper.

  • Take each marinated chicken piece and coat it well in the flour mixture.

  • For extra crunch, dip the coated chicken back into the marinade and then into the flour again (double coating method).

3. Deep Fry the Chicken

  • Heat oil in a deep pan over medium heat.

  • Gently place the coated chicken pieces into the hot oil.

  • Fry until golden brown and crispy on all sides (about 10–15 minutes depending on size).

  • Drain on paper towels to remove excess oil.
