For the Fish:

  • 500g white fish fillets (like cod, haddock, or tilapia)

  • Salt and pepper to taste

  • 1 cup all-purpose flour (for coating)

  • 1 cup all-purpose flour (for batter)

  • 1 tsp baking powder

  • 1 cup cold sparkling water (or beer for a traditional version)

  • Oil for deep frying (vegetable or sunflower oil)

For the Chips (Fries):

  • 3–4 large potatoes

  • Salt to taste

  • Oil for frying

1. Prepare the Chips:

  1. Peel and cut the potatoes into thick strips.

  2. Rinse in cold water and pat dry.

  3. Heat oil in a deep fryer or large pot to 160°C (320°F).

  4. Fry the chips for 4–5 minutes until soft but not colored.

  5. Remove and drain on paper towels. Set aside.

2. Make the Batter:

  1. In a bowl, mix 1 cup flour, baking powder, salt, and pepper.

  2. Gradually whisk in cold sparkling water (or beer) until smooth. Let it rest for 10 minutes.

3. Fry the Fish:

  1. Heat the oil to 180°C (350°F).

  2. Pat the fish dry and lightly coat in plain flour.

  3. Dip each fillet into the batter and carefully lower into the hot oil.

  4. Fry for 5–7 minutes until golden and crispy. Remove and drain on paper towels.

4. Final Fry for the Chips:

  1. Increase oil heat to 190°C (375°F).

  2. Fry the chips again for 2–3 minutes until golden and crispy.

  3. Drain and sprinkle with salt.
