🍟 Classic Canadian Poutine Recipe

Poutine is a famous Canadian comfort food made with crispy French fries, cheese curds, and hot gravy. This simple but delicious dish is rich, savory, and perfect for sharing or enjoying as a hearty snack.

📝 Ingredients:

  • 4 large potatoes (Russet potatoes work best)

  • Oil for frying (vegetable or canola oil)

  • 1 ½ cups fresh cheese curds (or chopped mozzarella if not available)

For the Gravy:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups beef or chicken broth

  • 1 tsp Worcestershire sauce

  • Salt and pepper to taste

👨‍🍳 Instructions:

1. Prepare the Fries:

  • Peel the potatoes (optional) and cut into thick fries.

  • Soak the fries in cold water for 30 minutes, then drain and pat dry.

  • Heat oil in a deep fryer or large pan to 175°C (350°F).

  • Fry the potatoes in batches until golden and crispy. Drain on paper towels and sprinkle with a little salt.

2. Make the Gravy:

  • In a saucepan, melt the butter over medium heat.

  • Add the flour and stir constantly to make a roux (thick paste), cooking for about 2 minutes.

  • Slowly pour in the broth while whisking to avoid lumps.

  • Add Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes until thick and smooth.

3. Assemble the Poutine:

  • Place hot fries on a serving plate.

  • Sprinkle cheese curds generously on top.

  • Pour hot gravy over the fries and curds so the cheese melts slightly.

🧀 Serving Tips:

  • Serve immediately while hot and melty.

  • Add toppings like pulled pork, mushrooms, or caramelized onions for variations.

💡 Tips:

  • Authentic poutine uses fresh white cheddar cheese curds that squeak — but mozzarella chunks can work in a pinch.

  • For extra crispy fries, fry them twice: once at a lower temperature to cook, and a second time at higher heat to crisp.
